Background information

  • General: (From a 2014 Decanter profile on Lafon): Montrachet is the only wine to be aged entirely in new oak. The premiers crus are aged in a proportion that varies from 25% to 40% and the wine stays in wood for 16 months. Lees-stirring is used sparingly – ‘usually when the fermentation is slow to finish or when the wine is reduced’, he says. His cellars are notoriously cold, so fermentations can be slow and the young wines benefit from long ageing before being racked and fined. [Note: In the same profile Dominique admits that he uses the "hyperoxidation" technique on "the last 10%" of the juice. Discussed elsewhere, this controverisal technique allows the juice to completely oxidize and drop out all polyphenols as precipitates before fermentation. ]
  • In vintage 1995: lighter batonnage than normal, stopped stirring at the end of January 96. Frequency not disclosed.
  • In vintage 1996: used batonnage; lees stirred until April 97, but less "than in the old days due to oxidation concerns."
  • In vintage 1999: did "minimal" stirring of the lees.
  • In vintage 2000: the wines "tended to be more reductive and thus I've done more batonnage than in 1999."
  • In vintage 2002: Lafon says that normally he does no batonnage after the ML is completed, but in 2002 the wines were very reductive after ML and so they stirred the lees twice after the ML completed.
  • In vintage 2003: absolutely no batonnage
  • In vintage 2004: "I did very little bâtonnage, in fact a good deal less than usual." According to John Gilman, in some published March 2005 notes, "Lafon is now rolling his barrels to mix up the fine lees during the early stages of the elevage, rather than opening them up and stirring them, as he feels this was allowing too much oxygenation of the young wines." Also according to Gilman (in Issue #19), since the 2004 vintage Lafon has been using unbleached corks that are coated with 100% paraffin (no silicone.)
  • In vintage 2005: Lafon did more stirring of the lees in 2005 than in 2004 because the wines were very reductive. According to Allen Meadows, Lafon has slightly raised the amount of free SO2 at bottling, has tightened its standards for corks. Meadows also confirms the elimination of silicone coatings and that all corks are now coated with 100% paraffin.
  • In vintage 2013: Lafon began using DIAM 30 composite corks and is bottling the whites with 35 ppm of free SO2.

A very full bodied, big boy wine in the DRC Montrachet. Some might have taken a different view and found it a bit poxed but I didn't find any hints of tiring.
